I am one of those people who anticipate with glee the clear autumn morning. Dame dark gray clouds with light rain mist moves over the flowers of spring and two things happen immediately: the closet will resemble a late-summer department store clearance rack as the fall wardrobe takes over, and the stove top with the comfort food. And all politicians incorrect comfort dishes breaking my floured and greasy mid-1950's edition cookbook from Betty Crocker, Wed favorite fall cuisine would have to be soup.
Soup (the creamier, the better!) Transports me to my days as an undergraduate, I had my little dress red jersey, where turning the plastic cap on my Partridge Family thermos I am rewarded with the smell of soup Slumgullion mom. Today I was betting that the smell of the soup floating in a strong wind nightfall brought my test results at least twenty per cent.
Once a mom create magical week soup our huge pot called "the pot". and the resulting aroma that seep into every corner and crevice of our home was not of this world. Like the cartoons the day, I could imagine my feet off the ground, nose sniffing the air, as he floated toward the simmering taste of heaven comes from the kitchen.
Mom had many names for her consommé concoctions; Italian Delight, Everything but the kitchen sink, or my favorite: Slumgullion Soup. And I loved every sip, despite ridiculous names. When I grew up, and asked the mother to soups recipes incredible, I left the big secret: one of her soups was made from leftovers. No were exactly recipes, she stammered, a little embarrassed at the thought. How could she not have recipes for their incredible gourmet soups?
I could not understand that these bowls of happiness that I so closely connected with my wonder years were not to be transmitted to future generations. Almost made me angry to I realized that although he could not have been pulled from the pages of Gourmet magazine or the hand-scrawled notes long stored in the trunk of great recipe grandmother, these soups were put together with a combination of financial need and love. Now I know.
Last night I looked in the fridge and pawed through get the cabinets to the left over ground beef, some broth, an assortment of canned vegetables, and the bottle from all parts of spaghetti sauce. I made my (mom's, really) Minestrone Mumbo for my husband, my parents and my daughters. I knew like the old school days. Mom smiled, "Do you have this recipe trunk Great Grandma's secret, right? "
"Sure Mom, just as you did."
Minestrone Mumbo
(Serves to six)
1 pounds of ground beef
4 potatoes (diced)
1 can corn with liquid
1 can of drained green beans
½ ¾ bag shell noodles (any noodle will do)
1 cup of vegetables (zucchini is what I prefer)
6 teaspoons or cubes of beef broth
1 jar red spaghetti sauce
Salt and pepper to taste
Instructions: Brown ground beef in a skillet and drain fat. Salt and pepper the meat.
Boil the potatoes in water until soft. Once the potatoes are tender, drain enough water to bring the potatoes are covered.
Adjust the temperature the stove to medium and add the drained ground beef. Make sure the water is boiling and add their little dried noodles. Cook until noodles are tender.
Add can of corn with juice, can of green beans drained, any other vegetable that you like, and 6 tablespoons or beef bouillon cubes, simmer. Taste to make sure enough flavor of the beef broth. (Sometimes you need more broth or less, just depends on the day, so be sure to prove.
At this point, pour in the bowl of spaghetti and backing of the pot to simmer. (This soup can also be made with chicken broth chicken instead of beef broth, and Alfredo sauce instead of red sauce. It is very good with a little Parmesan cheese and corn bread or French rolls. Probably not even have remains to pour into a thermos for school, too.
